Red Quinoa and Avocado Salad


Add this side dish to your summer menu!  Red quinoa is gluten free, high in protein, and contains essential amino acids. Low in cholesterol and high in magnesium, quinoa is certainly a trendy superfood, but above all, in this side salad, it's delicious!  Make it in the morning and stash it in the fridge to chill for dinner. No need to spend hours in the kitchen midday during the hot summer months! Perfect for dinner at home, or for a pot-luck picnic!

Ingredients:


1 box red quinoa (7oz), prepared per package directions and cooled
12 oz frozen sweet corn, prepared per package directions/cooled
1 cup cilantro, chopped
1 bunch scallions, thinly sliced on the bias
2 roma tomatoes, diced
2 avocados, diced (¼ inch pieces)
½ cup lemon vinaigrette (we use Wegman’s brand, use whichever brand is safe for your allergy profile)
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
Zest and juice of one lemon


Directions:


  1. Add quinoa, corn, cilantro, scallions, and tomatoes to a mixing bowl. Stir to combine well.
  2. Pour in vinaigrette and add avocados. Fold them in gently until fully combined.
  3. Top with the zest and juice of one lemon.
