Ingredients:
1 avocado, pitted and *scooped from skin
1 clove peeled garlic
3 limes (juice and zest)
Kosher salt
1 small handful of cilantro leaves
⅓ cup Olive Oil
Water to thin dressing if needed
Directions:
- *Place avocado, garlic, lime juice and zest, salt, and cilantro in a high powered blender such as a Vitamix. (Pro Tip: If the limes are hard, pop them in the microwave for 30 seconds to get the juice flowing!)
- *Begin to blend and stream in olive oil.
- *Add water if needed to thin dressing.
Variations:
- Add one plum tomato.
- Add one half of a jalapeno for a dressing with a real kick!
