Guacamole Dressing

I created this Guacamole Dressing for our Tex Mex Chicken Dinner. (Click HERE to go to that post.) I wanted something that had the bright taste of guacamole without having to actually make guacamole...so I guess this dressing was created because I was feeling a little lazy!  This dressing is creamy, tangy, and refreshing.  Best of all, it's dairy free and egg free...a rare combination for a creamy dressing!

Ingredients:


1 avocado, pitted and *scooped from skin
1 clove peeled garlic
3 limes (juice and zest)
Kosher salt
1 small handful of cilantro leaves
⅓ cup Olive Oil
Water to thin dressing if needed


Directions:
  1. *Place avocado, garlic, lime juice and zest, salt, and cilantro in a high powered blender such as a Vitamix. (Pro Tip: If the limes are hard, pop them in the microwave for 30 seconds to get the juice flowing!)
  2. *Begin to blend and stream in olive oil.
  3. *Add water if needed to thin dressing.

Variations:
  1.  Add one plum tomato.
  2.  Add one half of a jalapeno for a dressing with a real kick!
