Pulled Pork and Coleslaw

I really love to  utilize the slow cooker in the Summer.  I know a lot of people associate slow cookers with Fall and Winter favorites like pot roasts and hearty stews, but when the weather is nice, I want to spend most of afternoon and early evening outside, not heading into the kitchen to make dinner! One of my family's favorite summertime slow cooker meals is Pulled Pork with Coleslaw.  Deep flavor, contrasted with crisp, tangy Coleslaw, all on a bun or in a tortilla!  Pull out your slow cooker, and let the kids help you get this one going in the morning before heading out for a day of summer fun.  By the time you get home, dinner will be waiting for you

Tortilla Soup

This hearty Tortilla Soup will become a year round favorite! The big flavors of a taco dinner, with the convenience of a one pot meal!  This big batch soup is perfect for a filling dinner, or for keeping in the fridge for hungry kids to snack on during the day.  The recipe, as I have written it, is vegan, but I've included variations that utilize chicken, turkey, or beef at the the end of the post! Guacamole Dressing

I created this Guacamole Dressing for our Tex Mex Chicken Dinner. (Click HERE to go to that post.) I wanted something that had the bright taste of guacamole without having to actually make guacamole...so I guess this dressing was created because I was feeling a little lazy!  This dressing is creamy, tangy, and refreshing.  Best of all, it's dairy free and egg free...a rare combination for a creamy dressing!

Mexican Chicken and Rice

When I sit down to make the grocery list and meal plan for the week, I often ask my children if there's anything they would like to request.  The two most frequent responses are tacos, and turkey burgers.  And now...behold the meal that wins everyone's hearts, the meal that combines the two most frequently requested meals in The Allergy Safe Kitchen...The Towering Taco Burger!!!

Turkey Cutlets with Marsala Gravy

This twist on "Turkey Marsala" is a great weeknight dinner.  It cooks up quickly by using thin sliced turkey cutlets, and pre-made turkey gravy. I always have a stash of homemade turkey gravy in my freezer, but you could substitute your favorite can/jar turkey gravy. (Click HERE for my turkey gravy recipe.

Chocolate Mint Cookies

I love those thin, crispy, chocolate coated, mint chocolate cookies that are sold at certain times of the year...by moms selling them for their daughters (ahem...I think you know the cookies of which I speak.)  I have created a wonderful homemade, allergy friendly version that is delicious, anytime of the year, and perfect straight out of the freezer or refrigerator!

Simple Spaghetti Squash


Spaghetti Squash, nature's answer to low calorie (and gluten free) pasta.  I have long wanted to try Spaghetti Squash, but because I'm not a huge fan of acorn squash or butternut squash, I keep hesitating to make this allergy (and figure) friendly pasta replacement.  To be honest, I purchased a lovely looking Spaghetti Squash and procrastinated so long it went rotten!  After several requests for more GF recipes, and a deep desire to reclaim a healthy body after bearing 7 children, I bought another Spaghetti Squash and gave it a try.  I really should have done it sooner!

The Humble Jalepeno - Pico de Gallo and Guacamole



I love pico de gallo and guacamole.  I love to toss some chopped jalapenos into my chili.  I roast them on the grill and add them to roasted corn salsa, my husband's personal favorite. I've even been known to add one into my Kicked Up Sloppy Joe's.  The Humble Jalapeno, so small, so many uses, so delicious. Here are my recipes for pico de gallo and guacamole (or pico and guac, if you're super cool like that...and I know you are.) 

By ingredients, both the pico and guac are peanut-free, tree nut-free, dairy-free, egg-free, fish-free, wheat free, gluten free, soy free, and shellfish-free. Top 8 Allergen Free! As always, check this ingredient list and your local products to make sure that this recipe is allergy safe for your family and/or friends!

Roma tomatoes, limes, jalapenos cilantro, and onions, with a little kosher salt, are all you need for a delicious pico de gallo. Just remember, it's all about the ratio!  A great pico is more than just chopped tomatoes with a little bit of everything else.  The best pico has an equal amount of tomatoes, onion, and cilantro. No matter if you are making a lot or a little, remember: equal parts! Then, add finely diced jalapeno.  For more heat, leave the ribs/seeds in, for a little less heat, remove the ribs and the seeds. Sprinkle with kosher salt, and squeeze a generous amount of lime juice (to taste) over top of everything. 

*Mix until ingredients are evenly distributed, cover with plastic wrap and let it sit in the fridge for a couple hours.  All the flavors with meld together and you'll be left with a perfect pico! 

What about the guacamole?!

You'll only need two additional ingredients, garlic and avocados, to make my "Auntie B's Guacamole!" (And an extra lime.) Even my mom, who does not usually love (or even like) avocados, has requested that I make this guacamole for parties. 


*Scoop the beautiful goodness out of your avocados and mash with a little extra lime zest and juice. (Zest for a flavor boost, juice to keep the green creamy goodness from browning.) Add minced garlic and *stir together. I usually add 2-3 cloves per 4 avacadoes. Then, *mix in a generous portion of your pico for a perfect guacamole!  


Now, you're ready to party!  Serve with tortilla chips, make sure they're gluten free, and you'll have gorgeous, flavor packed, Top 8 Allergen Free snacks for your family and guests!

I became aware of Ian's Natural Foods when I attended The Food Allergy Bloggers Conference. What impressed me most about this brand was the variety of MEAL offerings.  There are a lot of food allergy focused companies specializing in snacks, desserts, safe baking items, etc.  But, few focus on providing a kid friendly, busy-mom-friendly, simple meal. Our family received a box of products from Ian's for review.

Shhhh...Super Secret Chili Recipe

I have guarded this chili recipe for years.  I have not shared it with friends, or family.  I have made it for informal chili cook-offs, game day parties, potlucks, and I have basked in the praise of my guests.  I have kept secret the two unexpected ingredients that elevate this chili from an ordinary dish, to a rich meal with layers of flavor. And now, now I am sharing it with you. It's time for me to share this goodness, nay, greatness.

Kitchen Tip Tuesday! Ditch the Dye



As a family, we've made a commitment to "Ditch the Dye."  It hasn't been too difficult to remove artificial dyes from our daily diet, it's really just about label reading and putting anything with artificial dye in it back on the shelf. But when it comes to decorating cutout cookies....?  There has to be a way to get colorful sprinkles on those cookies without artificial food coloring.

Kitchen Tip Tuesday! Onions

Today's kitchen tip takes a kitchen staple - the humble yellow onion - and unlocks both flavor and utility. 


When roasting meat, take the metal rack out of the roasting pan and replace it with thickly sliced onions.  The "onion rack" will keep the meat from touching the bottom of the pan, and will add great flavor to the pan drippings.  In addition, you can serve the onions over top of the sliced meat for a delicious flavor boost!

Ian's Onion Rings - Review

Our family received a box of products from Ian's for review. I'll be honest, Ian's scored points with the kids right away - the cooler was packed with dry ice.  Well now, a homeschooling family can't let that opportunity go to waste, right?  Once we opened the box, we spent a good half hour making fog and talking about sublimation. Bonus!  Thanks Ian's!

Sunbutter Review

Today, I am reviewing SunButter sunflower seed butter.  I received some in my swag from the Food Allergy Bloggers Conference, but we also purchase SunButter frequently on our own. 



First I'm going to start with a little story.  My husband and I both loved peanut butter.  One of my specialties used to be a wickedly decadent peanut-butter cream pie, with a chocolate and rice krispie crust...I'll just pause for a moment while you salivate.  

When we went cold turkey after my son was diagnosed with peanut allergies, it took a loooooong time for us to find something to fill that void.  We tried quite a few "butters" that really didn't taste very good.  After tasting one of them, (which shall remain nameless), my husband looked at me and said, "Please don't buy any more of these.  Give up.  Please."   So, I did.  Until I heard about one called "SunButter."  I'm going to be honest, I don't remember who recommended it to me all those years ago, but if it was you - THANK YOU!  

I brought some home, opened the jar and inhaled the roasted scent, startled that it smelled so good. My husband and I actually ate it with spoons, right out of the jar, standing in the kitchen, moaning. True story. 



So now that I've got you on the edge of your seat, wondering what kind of review I'll give SunButter...

Pros:  Peanut free, tree nut free, gluten free, dairy free, and egg free.  Here's a direct quote from their website: 
"Processed in a strictly nut-free facility (Our employees aren't even allowed to bring in peanut butter sandwiches for lunch!)"It's a direct substitute for peanut butter - in baking, and in daily life. Sandwiches, on crackers, on a spoon, using an Enjoy Life chocolate bar to scoop it out of the jar...(NOT that I would EVER do something like that...especially during pregnancy...ahem, back to the review). 

Cons: Just one - Cost.  This stuff is pricey. As a family of nine, we go through a lot of SunButter, but it does impact the food budget. You can order it online, in regular jars, and in a 5 pound size.  You can save a little bit by purchasing it that way.  

Bottom line: Our family loves SunButter so much, that several of the recipes in my first cookbook feature SunButter as a key ingredient. It is a staple in our pantry, and I still sometimes eat it from a spoon straight out the jar, in the middle of the kitchen.  (And so do my kids!) If you're craving a nutty tasting peanut butter replacement, go get some SunButter!  It comes in several varieties; we typically use Natural, and Crunch

Hosting Thanksgiving: Homemade and Allergy Safe

My family, my inspiration for all my recipes.  For them, I give thanks. 

We gather around the table.  We give thanks.  Family and friends bond over the breaking of bread and the sharing of bounty. May we have another year of plenty. Amen.

Every person should be able to share in a delicious meal with their family and friends without fear or anxiety over food allergies and restrictions. 

I have found that I, as a food allergy mom, have less anxiety and more enjoyment of the holidays when I host the meal.  I know it seems like hosting can be a lot of work, and it is, but it allows control over the ingredients, and the kitchen in which the dishes are prepared.  And that, to me, is worth any effort - to know that my children are safe and can relax around the the table. No worries over Aunt Gertrude planting a big kiss on my dairy allergic pre-schooler after eating cheese laden potatoes, or over someone mixing up the serving spoons between safe and unsafe side dishes.  No relatives concerned that they have done something "wrong" or dangerous." No cross-contamination to be concerned over, no constant watching over my shoulder to keep an eye on the faces and mouths of my children...looking to spot the first signs of redness or swelling.  When I take the menu, preparation, and venue into my own hands, the result is more relaxing for everyone.  

I have found great joy and peace in hosting the holidays in our home.  The kitchen is filled with delectable smells for days, the children help with the preparation of the food, the decorating of the table, and the creation of crafts to adorn the dining room.  It can be a beautiful time for the whole family.  It can also be overwhelming and a LOT of work! And let's be honest, not everyone in the family has the same idea of "tidy" when it comes to preparing the living room for company!  But even considering all of that, the joy of hosting a safe meal is greater. 

Stick with me over the next couple weeks, as I lead you through making dishes ahead of time, so your actual Thanksgiving eve, and day, can be enjoyable and safe!

Time for Turkey Stock - Thanksgiving Series



I prefer to make turkey stock about a week or two before Thanksgiving.  I make a lot of it, in order to make gravy, and also to have it ready for my favorite post-Thanksgiving turkey soup.  I prepare for my leftovers!  Making this stock means that you will be roasting a turkey in a very simple fashion.  Roasting this turkey is a means to an end, what you really want is the carcass.  It's a bit of effort now, so you don't have to work so hard on Thanksgiving, or right before it. So, break out the roasting pan, here we go!

Apple Bread



My family loves to pick apples in the Fall.  It's a much anticipated family outing, and every year we get more apples than the year before!  The children REALLY love apple muffins, but if I'm being totally honest with you, I detest greasing and then cleaning the muffin tins.  I was looking for an alternative, so I turned to my trusty "Joy of Cooking" cookbook.  Of course, the apple bread recipe had eggs, buttermilk, and nuts in the ingredient list, so I got to work doing what I love to do - taking a classic recipe, making it allergy friendly, and tweaking it until it's just right and no one suspects that it's dairy, egg, and peanut/tree nut free!
