Yesterday I was hunting for a quick sweet snack around 3:00 in the afternoon. The children had finished their schoolwork, the kitchen was relatively clean, and I had a whole hour before I had to start dinner. I kind of wanted Cake-in-a-Cup,but not just the same old chocolate. A while back, I had printed out a recipe for "SunButter Chocolate Mug Cake." (The SunButter website has a recipe section filled with scrumptious offerings.) I tweaked the original recipe just by making it dairy free, and changing one other tiny thing.
Here's my barely tweaked version.
By ingredients, this mug cake recipe is peanut-free, tree nut-free, dairy-free, egg-free, fish-free, and shellfish-free. As always, check this ingredient list and your local products to make sure that this recipe is allergy safe for your family and/or friends!

Ingredients:
2 1/2 Tablespoons unbleached all-purpose flour
1 Tablespoon granulated sugar
1/4 teaspoon aluminum free baking powder
pinch of kosher salt
1 Tablespoon MINUS 1/8 teaspoon unsweetened cocoa powder
1/8 teaspoon dark cocoa powder
2 Tablespoons Flax milk
1/4 teaspoon pure vanilla extract
1 1/2 Tablespoons Creamy SunButter
1 1/2 Tablespoons vegetable oil
Directions:
- *In a large mug, whisk together flour, sugar, baking powder, salt, and cocoa powders.
- *Whisk in Flax Milk, SunButter, and oil until smooth.
- *Microwave on high for 1 minute 20 seconds.
- *Top with powdered sugar, and if you're feeling extravagant, a scoop of So Delicious Dairy Free Frozen Dessert!
